Prepared fresh in-store every day.
Why Ichi-ban Boshi’s house-made noodles make all the difference

When it comes to ramen, most people focus on the soup first.
But we believe it’s actually the noodles that define the overall experience.

At Ichi-ban Boshi, we don’t rely on pre-made noodles.
We prepare, craft and fine-tune them in-house every single day.

Here’s why we’re so committed to making our own noodles — explained as simply as possible.

1. Texture is defined by the noodles

Aburi chashu ramen

“Delicious” ramen isn’t just about flavour.
It’s about the bounce when you slurp, the bite, and how it comes together in your mouth.
All of this changes significantly depending on how the noodles are designed.

Our house-made noodles are crafted to pair perfectly with our soup —
offering just the right chew, staying firm until the last bite, and allowing the aroma to shine through.

2. Flour blend and hydration change the noodle’s character

Even though they’re all “noodles”, the texture changes dramatically depending on the flour blend and hydration level.
Firmer noodles, smoother noodles, more aromatic noodles —
small adjustments can completely transform their character.

Temperature and humidity also affect the dough.
That’s why we don’t simply repeat the same process every day.
We believe in making small adjustments daily to get it just right.

3. Fresh noodles move differently

Freshly made noodles interact with the soup differently.
They feel cleaner on the palate and have a pleasant spring when you bite into them.
Most importantly, they’re less likely to go soggy as you eat.

It’s easy to think “all noodles are the same”,
but freshness is something you notice the moment you take your first bite.

4. We craft noodles for the soup

Our philosophy is simple.
We don’t just match noodles to the soup — we create the noodles for the soup.

A bowl isn’t complete with soup alone.
The tare, aromatic oil, toppings — and of course, the noodles.
Only when everything works in harmony is the bowl truly finished.

5. It takes effort. That’s the Ichi-ban Boshi way.

Making noodles in-house isn’t the easy option.
But that extra effort makes a difference.

The way the soup coats the noodles when you lift them.
The aroma that gently rises as you slurp.
The satisfying texture right through to the final bite.
That’s why we prepare them fresh every day.
